  • 1 pound chicken sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Cook the chicken sausage until browned, about 5-7 minutes; remove and set aside.
  2. In the same pot, sauté diced onion, carrots, and celery until tender, about 5 minutes. Stir in garlic and Italian seasoning; cook until fragrant.
  3. Add chicken broth and diced tomatoes; return the sausage to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add tortellini according to package instructions (usually 7-9 minutes) until tender.
  5. Stir in fresh spinach and let wilt for 1-2 minutes. Season with salt and black pepper to taste.
  6. Serve hot, optionally garnished with grated Parmesan cheese and fresh parsley.
