  • 2 slices whole grain or rye bread, toasted
  • 2 tbsp cottage cheese
  • 1 avocado, thinly sliced
  • 12 cherry tomatoes, sliced
  • 2 soft-boiled eggs (7-minute cook)
  • Fresh microgreens or chopped chives
  • Salt & pepper to taste

Instructions

  1. Boil two eggs in a pot of gently boiling water for 7 minutes. Once cooked, cool them under cold water before peeling.
  2. While the eggs are cooking, toast two slices of whole grain or rye bread until golden brown.
  3. Spread 2 tablespoons of cottage cheese on each slice of toast.
  4. Layer thinly sliced avocado and sliced cherry tomatoes on top.
  5. Sprinkle with salt, pepper, and garnish with fresh microgreens or chopped chives.
  6. Slice the jammy eggs in half and serve alongside the toasts.
