  • 1 medium cucumber (seeded and thinly sliced)
  • 4 oz. feta cheese (crumbled)
  • 1/4 cup fresh dill (roughly chopped)
  • 1 tablespoon lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt

Instructions

  1. Prepare the dressing by whisking together lemon juice and salt in a small bowl until dissolved. Gradually add olive oil while whisking to emulsify.
  2. In a large mixing bowl, combine the sliced beets with half of the dressing and mix gently. Let sit while preparing other ingredients.
