  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • 1 lemon (zest only)
  • 1 tablespoon lemon juice
  • 2 tablespoons white apple vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat the oven and bake turkey bacon until crisp; chop into pieces once cooled.
  2. In a bowl, combine dressing ingredients and whisk until smooth.
  3. Chop broccoli into small florets and add to the bowl with dressing.
  4. Mix in cranberries, sunflower seeds, cheese, and most of the turkey bacon; stir gently.
