  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat the oven to 350°F. Grease two 8×8 pans and line them with parchment paper.
  2. In a bowl, combine melted butter, granulated sugar, and brown sugar; mix until well blended.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract until combined.
  5. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add this to the wet ingredients until just combined.
  6. Divide the brownie batter between the two prepared pans and spread evenly.
  7. Bake for 30–40 minutes or until a toothpick inserted comes out with moist crumbs.
  8. Allow brownies to cool before removing from pans using parchment paper.
  9. Thaw the ice cream slightly for easy spreading, then layer it on one half of the brownie.
  10. Top with the second brownie half and freeze for at least six hours or overnight before serving.
