  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat grill to medium-high heat. Season chicken or steak with olive oil, chili powder, cumin, salt, and black pepper.
  2. Grill protein for about 2-3 minutes per side until fully cooked.
  3. In a bowl, mix diced tomatoes, onion, cilantro, jalapeño (if using), lime juice, salt, and pepper for pico de gallo.
  4. Whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and black pepper for the aioli.
