  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 tablespoon honey
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup cheddar jack cheese (shredded)
  • 12 tablespoons olive oil
  • 1 ½ teaspoons Cajun seasoning
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 3 tablespoons flour
  • 2 teaspoons lime juice
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook chicken for 5–7 minutes on each side until browned and cooked through. Remove from skillet.
  2. In the same skillet, melt butter over medium heat and sauté garlic until fragrant. Whisk in flour for about 1 minute, then gradually add chicken broth while stirring.
  3. Stir in heavy cream, honey, hot sauce, remaining Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes; simmer for 5 minutes until slightly thickened.
  4. Add diced tomatoes (with juice reserved) and cooked chicken back into the sauce; simmer for an additional 5 minutes.
  5. Sprinkle cheese on top to melt slightly before serving with lime juice and fresh cilantro.
