  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until clear.
  2. Cook rice with water according to package instructions.
  3. Once cooked, mix warm rice with rice vinegar, sugar, and salt in a bowl.
  4. Slice cucumber and dice avocado; set aside.
  5. In serving bowls, layer seasoned rice topped with cucumber slices, diced avocado, and imitation crab meat.
  6. Drizzle with soy sauce and add sriracha if desired. Serve immediately.
