  • 1 1/4 pounds boneless skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon pesto
  • 1 teaspoon olive oil
  • 1 teaspoon honey
  • Kosher salt and black pepper to taste
  • 5 ounces baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1 cup mini fresh mozzarella balls
  • 1/3 cup plain Greek yogurt
  • 1/4 cup low fat milk
  • 1 1/2 tablespoons pesto
  • 2 tablespoons vinegar
  • 1/4 teaspoon granulated garlic

Instructions

  1. In a small bowl, whisk together balsamic vinegar, pesto, olive oil, honey, and seasonings. Place chicken in a large freezer bag, pour marinade over it, seal tightly, and refrigerate for at least one hour or overnight.
  2. Preheat your grill to medium-high heat. Grill the marinated chicken for about 4-6 minutes on each side until cooked through. Let it rest for 5 minutes before slicing.
  3. In a small bowl, mix Greek yogurt, milk, pesto, vinegar, garlic powder, and seasonings to create the dressing.
  4. On a large platter or bowl, layer baby spinach first, then add sliced chicken, halved cherry tomatoes, and mozzarella balls. Drizzle with dressing just before serving.
