  • 1 Tbsp butter or olive oil
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • Italian herbs and seasonings

Instructions

  1. In a large pot, heat the butter or olive oil over medium heat. Add the onion and a pinch of salt and pepper; sauté for 5 minutes until soft.
  2. Stir in the garlic and cook for another minute.
  3. Add the carrots, potatoes, celery, Italian herbs, salt, and pepper; cook for 2-3 minutes.
  4. Pour in the vegetable broth; bring to a boil then reduce heat to simmer for about 20 minutes until vegetables are tender.
  5. Blend part of the soup until smooth using a stand blender or hand blender; combine back into the pot.
  6. Adjust seasoning as needed before serving.
