  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • Olive oil, salt, and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the potatoes, pierce them with a fork, rub with olive oil, and season with salt and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes or until tender.
  4. Meanwhile, brown the ground beef in a skillet over medium heat, drain fat, and stir in taco seasoning as per package instructions.
  5. Once the potatoes are done, cut them open lengthwise and fill with seasoned beef.
  6. Top each potato with cheddar cheese and return to the oven for another 5 minutes until melted.
