  • 1 cup diced boneless skinless chicken breasts
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice (leftover or day-old is preferred)
  • 2 Tbsp reduced sodium soy sauce
  • 1 tsp toasted sesame oil
  • 2 green onions (diced)

Instructions

  1. Gather all ingredients for smooth cooking.
  2. Heat 1 tablespoon avocado oil in a wok over medium-high heat. Cook diced chicken seasoned with salt and pepper until browned (5-7 minutes). Remove from pan.
  3. In the same wok, add remaining oil, then sauté diced onion, garlic, and ginger until fragrant (2-3 minutes).
  4. Stir in pineapple chunks and thawed peas and carrots; mix well.
  5. Return cooked chicken to the wok, combining everything thoroughly.
  6. Add cooked jasmine rice and drizzle with soy sauce and sesame oil; stir until heated through.
  7. Garnish with diced green onions before serving.
