  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 8 oz cremini mushrooms (sliced)
  • 3 garlic cloves (minced)
  • 1/3 cup all-purpose flour
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • Fresh thyme and oregano

Instructions

  1. For the sauce, combine marsala apple vinegar and chicken broth in a medium saucepan. Bring to a boil, then simmer until reduced to about 1 cup (approximately 15 minutes).
  2. Season chicken with salt and pepper, then dredge in flour.
  3. In a skillet over medium-high heat, melt butter and olive oil. Sear the chicken until cooked through (internal temperature should reach 165°F), about 10-12 minutes.
  4. Remove chicken and keep warm; add remaining butter and oil to skillet along with mushrooms. Sauté until golden brown, about 8 minutes, adding garlic during the last minute.
  5. Stir in the reduced marsala mixture with thyme and oregano, then return to heat until simmering.
  6. Mix cornstarch with chicken broth; add to sauce until thickened. Stir in heavy cream, season to taste, and return chicken to pan, spooning sauce over it.
