  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, finely chopped
  • 2 tbsp chopped cilantro
  • 1 tsp soy sauce
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp Thai red curry paste
  • 1 can (13.5 oz) coconut milk

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, grated ginger, green onions, cilantro, soy sauce, breadcrumbs, egg, salt, and pepper. Mix until just combined.
  2. Heat vegetable oil in a frying pan over medium heat. Form the mixture into small balls (about 1 inch in diameter) and cook until golden brown on all sides (8-10 minutes). Remove from the pan.
  3. In the same pan, add more oil if necessary and sauté minced garlic until fragrant. Stir in Thai red curry paste and cook for another minute.
  4. Add coconut milk to the pan and adjust seasoning if needed. Gently add cooked meatballs to the sauce and simmer for about 5 minutes.
