  • 1 pound boneless skinless chicken breasts
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • 1 cup broccoli florets
  • 3 tablespoons vegetable oil (divided)
  • Sauce: soy sauce
  • Hoisin sauce
  • Oyster sauce
  • Rice apple vinegar
  • Sriracha
  • White ground pepper

Instructions

  1. In a mixing bowl, whisk together all the sauce ingredients; set aside.
  2. Boil water in a large saucepan and cook ramen noodles for 1-2 minutes; drain and rinse under cold water.
  3. Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook diced chicken until fully cooked; remove from skillet.
  4. Add remaining oil to the skillet and sauté red bell pepper, mushrooms, and onion until tender.
  5. Stir in broccoli florets, garlic, and ginger; cook until fragrant.
  6. Return chicken to the skillet with vegetables; mix thoroughly.
  7. Add ramen noodles and pour sauce over everything; toss to combine.
  8. Serve hot and garnish with green onions and sesame seeds if desired.
