  • 500g strong white bread flour
  • 10g salt
  • 50g caster sugar
  • 10g instant yeast
  • 250ml cool water
  • 250g chilled unsalted butter (high-quality recommended)
  • 1 medium egg (beaten for glazing)

Instructions

  1. In a stand mixer with a dough hook, combine flour, salt, sugar, and yeast. Mix on low speed for about 2 minutes.
  2. Add cool water and mix on medium speed for about 6 minutes until a stiff dough forms.
  3. Shape the dough into a ball, dust lightly with flour, and refrigerate in a plastic bag for 1 hour.
  4. Roll out into a rectangle (60x20cm), prepare the butter block (40x19cm), and encase it in the dough.
  5. Chill again for an hour and then roll and fold the dough three times, chilling between each turn.
  6. After resting overnight in the refrigerator, shape into triangles and proof until doubled in size.
  7. Preheat oven to 200°C (392°F), glaze with beaten egg, and bake for about 15–20 minutes until golden.
