  • 2 lamb shanks
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Salt and pepper, to taste
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1 can (14 oz) full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper, then sear on all sides until browned (about 5-7 minutes). Remove from pot.
  2. In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and ginger; cook for another minute until fragrant.
  3. Stir in ground coriander, cumin, cinnamon, salt, and pepper; cook for about 30 seconds.
  4. Return lamb shanks to the pot with sweet potato chunks. Pour in coconut cream and broth; squeeze lime juice over.
  5. Bring to a simmer, cover with a lid, reduce heat to low, and let gently simmer for about 2 hours until lamb is tender.
