  • 1 1/2 cups crushed chocolate sandwich cookies
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan and line with parchment paper.
  2. Combine crushed cookies and melted butter; press mixture into the bottom of the pan and bake for 10 minutes. Let cool.
  3. In a bowl, beat cream cheese, sugar, and cornstarch until smooth. Incorporate eggs one at a time on low speed.
  4. Whisk together sour cream, heavy cream, espresso powder, and vanilla; fold into the batter.
  5. Pour batter over the cooled crust, smoothing the top.
  6. Wrap pan in foil and place it in a larger baking dish filled with hot water. Bake for 50-55 minutes until edges are set.
  7. Turn off oven and let cheesecake cool inside for an hour before refrigerating for at least 6 hours or overnight.
