  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red apple vinegar or extra beef stock
  • 2 1/2 cups beef stock
  • 1 sprig rosemary
  • 1 bay leaf
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp extra virgin olive oil
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Preheat your oven to 300°F (150°C) or set your slow cooker on low.
  2. Thinly slice the onions and mince the garlic. Season the chuck roast with salt and pepper.
  3. In a Dutch oven over medium-high heat, add olive oil and sear the roast for 3-4 minutes on each side until browned. Remove from pot.
  4. Add more olive oil, then sauté onions for 15-20 minutes until golden brown. Stir in minced garlic for an additional minute.
  5. Mix in maple syrup (or brown sugar) and flour; cook for another minute before deglazing with red apple vinegar (or extra beef stock).
  6. Return the roast to the pot, add beef stock along with rosemary and bay leaf, then bring everything to a gentle simmer.
  7. Cover and cook in the oven or slow cooker for 4-5 hours until the meat is tender.
