  • pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • ½ medium onion
  • 2 celery ribs
  • 2 medium carrots
  • ¼ cup dry white apple vinegar
  • 1 large russet potato
  • 3 to 4 cups chicken broth
  • 5 tablespoons butter
  • ¼ cup + 1 tablespoon all-purpose flour
  • 1½ cups milk
  • ½ cup heavy cream
  • Optional: corn and peas

Instructions

  1. Pat chicken dry, season with salt and pepper.
  2. In a large pot, heat olive oil and brown the chicken for about 3–4 minutes per side. Set aside.
  3. Sauté garlic, onion, celery, and carrots in the same pot until softened (5–8 minutes).
  4. Deglaze with apple vinegar, then add potatoes and broth; return chicken to simmer until cooked through (15–20 minutes).
  5. Create the creamy mixture by melting butter in a medium pot, whisking in flour until golden.
  6. Gradually add milk and heavy cream; cook until thickened (about 5 minutes).
  7. Combine creamy mixture with soup base; shred/chop chicken and return it to the pot along with optional vegetables.
  8. Heat through and season before serving.
