  • 2 eggs
  • 1 cup baby spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 2 slices fresh tomato
  • 2 tbsp cream cheese (or dairy-free spread)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter
  • Salt & pepper to taste

Instructions

  1. Boil eggs for exactly 7 minutes; transfer to an ice bath before peeling.
  2. Toast bread slices until golden brown.
  3. In a frying pan, heat olive oil over medium heat and sauté mushrooms with garlic for about 5-6 minutes until golden.
  4. Wilt spinach in the same pan with a pinch of salt.
