  • 34 cloves garlic (minced)
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)
  • 7 ounces chopped green chiles (mild or hot)
  • 1 cup frozen corn

Instructions

  1. Chop the onion, mince the garlic, and cut cream cheese into cubes. Drain the cannellini beans if needed.
  2. In a heavy-bottomed pot over medium heat, melt the butter and sauté the onion and garlic until softened.
  3. Stir in ground cumin and dried oregano, cooking for about one minute to release flavors.
