  • 170 g digestive biscuits
  • 100 g melted butter
  • 900 g softened cream cheese
  • 200 g caster sugar
  • 160 g sour cream
  • 1 ½ teaspoons vanilla extract
  • Pinch of salt
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F). Combine crushed digestive biscuits with melted butter in a bowl and press firmly into the bottom of a springform pan.
  2. In a mixing bowl, beat softened cream cheese until smooth. Gradually mix in caster sugar, followed by sour cream, vanilla extract, and salt.
  3. Add lightly beaten eggs one at a time, mixing until incorporated. Pour the filling over the crust and bake for about 60 minutes until set but slightly jiggly in the center.
  4. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.
  5. Once cooled, refrigerate for at least four hours or overnight. Before serving, sprinkle granulated sugar on top and use a kitchen torch to caramelize until golden brown.
