  • 1 tsp garlic, minced or paste
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 large egg (for dressing)
  • ½ cup olive oil
  • ½ cup Parmesan cheese (for dressing)
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tbsp garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper (for dressing)
  • Salt (to taste)
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt (for topping)

Instructions

  1. Marinate the chicken: Combine marinade ingredients in a bowl, coat the chicken thighs, and let them marinate for at least 20 minutes.
  2. Prepare the crunchy topping: Melt butter in a skillet, add panko breadcrumbs and salt, stirring until golden brown. Set aside.
  3. Make the dressing: Blend all dressing ingredients until smooth and set aside.
  4. Fry the chicken: Heat canola oil to 350°F (175°C) and fry marinated chicken thighs until golden brown (about 8–10 minutes). Transfer to a wire rack to drain excess oil.
  5. Assemble the sandwich: Mix romaine lettuce with dressing, toasted panko, and Parmesan. Spread additional dressing on croissant halves, add crispy chicken, top with salad mixture, cover with croissant tops, and serve immediately.
