  • 3 lb chuck roast (trimmed)
  • 1 cup beef broth
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)

Instructions

  1. Season the chuck roast by coating it with oil and generously applying steak seasoning and thyme.
  2. Sear each side of the roast in a hot skillet for 2-3 minutes until browned to lock in flavor.
  3. Pour beef broth into the skillet, simmer for one minute while scraping the bottom, then transfer to the slow cooker.
  4. If using, prepare vegetables by cutting into large pieces, season them, and place on top of the roast in the slow cooker.
  5. Slow cook on low for 7-8 hours or high for 3.5-4 hours until tender.
  6. Check tenderness; if ready, mix cornstarch with water, stir into liquid to thicken gravy, and cook an additional hour if needed.
  7. Serve warm by removing meat from the slow cooker; slice or shred as desired.
