  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil or neutral oil
  • coarse ground salt and fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can Fire roasted diced tomatoes
  • ¼ cup Apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • corn or flour tortillas
  • lime wedges
  • fresh cilantro leaves
  • diced white onion
  • shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Sear the beef: Heat oil in a cast iron skillet over high heat. Season beef with salt and pepper, then sear each side for 5–6 minutes.
  2. Prepare the crockpot: Transfer seared beef to the crockpot. Add chiles, onion, garlic, beef stock, and remaining sauce ingredients. Stir to combine.
  3. Slow cook: Cover and cook on low heat for 8 hours until tender.
  4. Shred the beef: Remove from crockpot and shred using two forks.
  5. Make the sauce: Discard bay leaves and blend remaining sauce ingredients until smooth.
  6. Combine: Return sauce to crockpot and mix with shredded beef.
