  • 1 1/2 cups unsalted butter (softened)
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 2 tablespoons whole milk

Instructions

  1. 1. Combine flour, sugar, salt, and yeast in a stand mixer bowl. Gradually add cold milk while mixing on low speed until combined.
  2. 2. Knead on medium speed for about 5 minutes until smooth. Shape into a ball, cover, and refrigerate for at least one hour.
  3. 3. Roll one portion of softened butter into an even rectangle between parchment paper; roll out chilled dough into a larger rectangle and place the butter layer in the center.
  4. 4. Fold the dough over the butter, roll into a long rectangle, then fold it into thirds and refrigerate for another hour.
  5. 5. Roll out again into a large rectangle and cut triangles; roll each triangle from base to tip tightly.
  6. 6. Place shaped croissants on lined baking sheets to rise until doubled in size (about an hour).
  7. 7. Preheat oven to 400°F (200°C). Brush with egg wash made from whisked egg and milk. Bake for about 18 minutes until golden brown.
