  • 312.5 g cold unsalted butter

Instructions

  1. Activate the yeast by mixing warm milk and yeast; let sit until frothy.
  2. In a large bowl, combine flour, sugar, and salt; add the yeast mixture to form dough.
  3. Knead on a floured surface for 6-8 minutes until smooth.
  4. Chill the kneaded dough wrapped in plastic wrap for at least 1 hour.
  5. Prepare the butter layer by flattening cold butter into a rectangle and chilling again if necessary.
  6. Roll out the dough and encase the butter, then laminate by rolling and folding multiple times.
