  • 1/2 cup butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix (Half of 3.4 oz)
  • 1/2 cup milk
  • 4 oz cool whip
  • 1 medium banana (slightly ripe, chopped)
  • Nilla wafers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar using an electric mixer. Add in the egg and Butter vanilla emulsion until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt before gradually mixing into wet ingredients until fully incorporated.
  4. Scoop dough onto a parchment-lined baking sheet with space between each cookie. Bake for approximately 8 minutes or until edges are lightly golden.
  5. Allow cookies to cool on a wire rack.
  6. For the topping, whisk together instant pudding mix and milk until smooth; then fold in cool whip.
  7. Once cooled, top each cookie with the cream mixture and garnish with chopped bananas and Nilla wafers.
