  • 1 English cucumber (sliced into rounds then quartered)
  • 2 cups grape tomatoes (sliced in half)
  • ½ cup red onion (sliced into thin strips)
  • 2 Tbsp chopped parsley
  • ¼ cup extra virgin olive oil
  • 3 Tbsp red apple vinegar
  • 1 Tbsp granulated sugar (or honey)
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Wash all vegetables thoroughly. Slice the cucumber into rounds and quarter each round. Halve the grape tomatoes and thinly slice the red onion.
  2. In a small bowl, whisk together olive oil, red apple vinegar, sugar (or honey), dried basil, salt, and pepper until well combined.
  3. In a large mixing bowl, combine all chopped vegetables and drizzle the dressing over them. Toss gently to coat evenly.
  4. Cover and chill in the fridge for at least two hours to allow flavors to meld before serving.
