  3. Roll out the dough into a rectangle (about 1/2 inch thick) and place cold butter in the center; fold dough over to encase it.
  4. Roll out again into a long rectangle and fold into thirds like a letter; repeat two more times.
  5. Cut triangles from the final rolled-out dough, place chocolate at wide ends, and roll towards points.
  6. Preheat oven to 400°F (200°C). Brush croissants with milk and bake for approximately 20 minutes until golden brown.
