  • 1 cup fine bulgur
  • 2 cups boiling water
  • 3 cups curly parsley (minced)
  • 3/4 cup green onion (chopped)
  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice
  • 1 1/2 teaspoons kosher salt

Instructions

  1. 1. Begin by soaking the bulgur in boiling water for at least 30 minutes until tender.
  2. 2. While the bulgur soaks, wash and chop the parsley, mint, green onions, and tomatoes.
  3. 3. In a bowl or pitcher, whisk together the olive oil, lemon juice, and salt until combined.
  4. 4. Once the bulgur is ready, drain it thoroughly and transfer it to a large mixing bowl with the chopped vegetables.
  5. 5. Pour the dressing over the salad and mix well until all ingredients are evenly coated.
