- 1 cup fine bulgur
- 2 cups boiling water
- 3 cups curly parsley (minced)
- 3/4 cup green onion (chopped)
- 1/4 cup fresh mint (minced)
- 1 1/2 cups roma tomatoes (diced)
- 1/2 cup extra virgin olive oil
- 1/2 cup fresh lemon juice
- 1 1/2 teaspoons kosher salt
- 1. Begin by soaking the bulgur in boiling water for at least 30 minutes until tender.
- 2. While the bulgur soaks, wash and chop the parsley, mint, green onions, and tomatoes.
- 3. In a bowl or pitcher, whisk together the olive oil, lemon juice, and salt until combined.
- 4. Once the bulgur is ready, drain it thoroughly and transfer it to a large mixing bowl with the chopped vegetables.
- 5. Pour the dressing over the salad and mix well until all ingredients are evenly coated.
