  • 1 pound ground turkey sausage (mild or spicy)
  • 3 medium carrots, diced
  • 1 medium onion, diced
  • 23 ribs celery, diced
  • 1 medium red bell pepper, chopped
  • 23 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1½ cups Ditali pasta (or small pasta)
  • 1½ cups fresh spinach, chopped
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. In a large pot over medium-high heat, crumble and cook the ground turkey sausage until browned. Remove from pot and drain excess fat.
  2. In the same pot, sauté onions, carrots, celery, and red bell pepper for about 5-7 minutes until softened. Add garlic and seasonings; cook for another minute.
  3. Return the sausage to the pot along with chicken broth and diced tomatoes. Bring to a boil then reduce heat to low and simmer for about 10-15 minutes.
  4. Stir in the pasta and cook according to package instructions until al dente (about 10 minutes).
  5. Add chopped spinach and stir until wilted (about 1-2 minutes).
  6. Serve hot with freshly grated cheese and basil on top.
