  • 65 g powdered sugar
  • 70 g egg whites (room temperature)
  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (if desired)
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 3½ tablespoons milk
  • ½ cup unsalted butter (softened)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl.
  3. Whip egg whites in a separate bowl until foamy. Gradually add fine granulated sugar until stiff peaks form.
  4. Gently fold in dry ingredients until fully combined; add gel food coloring if desired.
  5. Pipe small circles onto prepared baking sheets and tap to release air bubbles.
  6. Bake for about 18 minutes or until shells rise and form 'feet.' Cool completely before removing from parchment.
  7. Prepare the filling by whisking egg yolks and sugar over low heat until thickened, then mix in milk, cool slightly, and beat in softened butter and vanilla extract until smooth.
  8. Assemble by filling half of the macaron shells with the filling and topping with another shell.
