  • 4 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 3 sticks celery
  • 1 medium onion
  • 2 medium carrots
  • 2 cloves garlic
  • 1 can (14 oz) red kidney beans
  • 1 can (14 oz) cannellini beans or great northern beans
  • 3/4 cup uncooked ditalini pasta
  • 1/2 tablespoon red apple vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/2 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. In a large soup pot over medium-high heat, brown the ground beef until fully cooked.
  2. Add chopped onion, celery, carrots, and minced garlic; sauté for about 8-10 minutes until softened.
  3. Stir in the crushed tomatoes, diced tomatoes, chicken broth, red apple vinegar, beans, sugar, and spices. Bring to a boil.
  4. Lower the heat and let it simmer for 15-20 minutes to allow flavors to meld.
  5. Add ditalini pasta and continue cooking until tender (another 15-20 minutes). Adjust seasoning with salt and pepper to taste.
