  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 2 tablespoons extra-virgin olive oil
  • 1 medium onion (diced)
  • 14.5 ounces diced tomatoes (canned)
  • 1 cup shredded cheddar jack cheese
  • Garlic, oregano, paprika, salt, and pepper

Instructions

  1. Preheat the oven to 375°F. Prepare bell peppers by cutting off the tops and removing seeds.
  2. In a large pan over medium heat, sauté diced onion in olive oil until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in ground beef, cooking until browned. Drain excess fat if necessary.
  4. Mix in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper. Cook for about 4-5 minutes.
  5. Stuff each pepper with the mixture and place in a baking dish. Bake for 10-12 minutes until the peppers are tender.
