  • 2 medium ripe avocados
  • 1 jalapeño
  • 1 small shallot
  • 1/4 cup fresh basil leaves, roughly chopped
  • 3 Tbsp. fresh mint leaves, roughly chopped
  • 1/4 cup roasted pumpkin seeds
  • 4 Tbsp. extra-virgin olive oil, divided
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. mayonnaise
  • 1 grated garlic clove
  • 3/4 tsp. ground sumac (sub paprika)
  • 3/4 tsp. kosher salt, divided
  • 1/2 tsp. black pepper, divided

Instructions

  1. Char three ears of corn in olive oil until lightly charred; let cool.
  2. Prepare the dressing by whisking together olive oil, rice vinegar, mayonnaise, garlic, sumac (or paprika), salt, and pepper.
  3. Cut kernels from all corn ears; combine with diced avocado, jalapeño, herbs, pumpkin seeds, and cheese (if using) in a mixing bowl.
  4. Pour dressing over the salad mixture and toss gently to combine.
