1 cup elbow macaroni
1 cup milk
1/2 cup grated cheddar cheese
1/4 cup butter
1 tablespoon flour
1 cup all-purpose flour
1 cup panko bread crumbs
1 egg, beaten
1 (14.5 ounce) can diced tomatoes, undrained
1 tablespoon tomato paste
1 clove garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
Cook macaroni according to package directions; drain and set aside.
In a saucepan, melt butter over medium heat, whisk in flour for 1 minute, then gradually add milk until thickened. Stir in cheese, salt, and pepper until melted.
Combine cooked macaroni with cheese sauce and let cool slightly before shaping into balls.
Dip each ball in beaten egg, then coat with flour followed by panko bread crumbs.
