  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup cooked corn
  • 1/4 cup feta cheese
  • 1/2 jalapeño (seeds removed and sliced)
  • 3 tbsp red onion (diced)
  • 2 tbsp cilantro

Instructions

  1. Prepare the coatings by combining flour, smoked paprika, salt, and pepper on one plate. Whisk the egg in a separate bowl and place panko breadcrumbs on another plate.
  2. Slice the tomatoes into thick rounds and dip each slice into the flour mixture, then egg, followed by panko breadcrumbs. Set aside.
  3. In a mixing bowl, combine cooked corn, feta cheese, jalapeño, red onion, cilantro, salt, and pepper to make the corn salsa.
  4. Heat oil in a skillet over medium-high heat. Fry tomato slices for about 1 minute on each side until golden brown. Drain on paper towels.
