  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (or other fruit-flavored crispy cereal, divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter and granulated sugar until fluffy. Add egg and vanilla extract; mix well.
  3. Gradually stir in all-purpose flour, baking soda, and salt until just combined. Fold in an additional cup of Fruity PEBBLES™ Cereal.
  4. Scoop out about 3–4 tablespoons of dough, flatten it in your palm, place one vegan marshmallow in the center, and wrap the dough around it completely. Roll in remaining cereal.
  5. Place on a parchment-lined baking sheet about three inches apart. Bake for 8-11 minutes or until marshmallows are visible through cracks.
  6. Allow cooling slightly before transferring to a wire rack.
