  • 1 chicken breast, sliced
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 200C (400F). Toss carrot sticks with olive oil, salt, and pepper on a baking sheet. Roast for about 25-30 minutes until caramelized.
  2. Cook rice according to package instructions and keep warm.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Season chicken with salt and pepper, then add to the skillet. Cook for 5-7 minutes until golden brown.
