  • 600 g rib-eye steak
  • 300 g cremini mushrooms
  • 1 medium onion
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil
  • Kosher salt and freshly cracked black pepper (to taste)
  • Chopped chives (for garnish)
  • Egg noodles or tagliatelle (for serving)

Instructions

  1. Prepare the rib-eye steak by pounding it to an even thickness, then slice into strips and season with salt and pepper.
  2. Heat 1 tablespoon of oil in a frying pan over high heat. Sear half of the beef strips for about 30 seconds on each side until browned. Transfer to a plate.
  3. Repeat with remaining beef strips.
  4. Reduce heat to medium, melt butter in the same pan, add thinly sliced onion, and cook for about one minute before adding mushrooms. Stir occasionally for four minutes until golden brown.
  5. Sprinkle flour over vegetables, stirring continuously for one minute to create a roux.
  6. Pour in half a cup of beef broth while scraping up browned bits from the pan. Add remaining broth and Dijon mustard; simmer for five minutes.
  7. Remove from heat and stir in sour cream until silky.
  8. Return seared beef along with juices back into sauce; heat on low for one minute until warmed through.
  9. Serve over buttered egg noodles or tagliatelle, garnished with chopped chives.
