  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 2 cups pureed tomatoes
  • Fresh herbs (parsley, oregano, mint)
  • 23 tablespoons olive oil
  • 1 onion, finely chopped
  • 56 garlic cloves, grated
  • 1 and 1/2 teaspoons salt or to taste
  • freshly cracked black pepper
  • 1/3 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried mint
  • 1 teaspoon dried dill
  • 2 cups onion broth

Instructions

  1. Prepare the onions by cutting off tops and bottoms, making slits down one side, and boiling in salted water until softened (10-15 minutes). Reserve broth.
  2. In a skillet, sauté chopped onion in olive oil until softened. Add grated garlic and cooked ground beef; season well. Incorporate tomato puree, then stir in rice and reserved onion broth, cooking until absorbed.
  3. Stuff each onion layer with the filling and arrange them seam-side down in a baking pan.
  4. Mix sauce ingredients together and pour over the stuffed onions. Cover with foil.
  5. Bake at 400°F (200°C) for 45 minutes covered, then uncover and bake for another 35-45 minutes until tender.
