  • 1 cup arugula or mixed greens
  • 1 avocado, sliced
  • 56 cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup crumbled feta cheese
  • A few beet or red onion strips (optional)
  • 1 cup garlic croutons
  • 1 tbsp olive oil (optional)
  • 1 tsp lemon juice or balsamic vinegar (optional)

Instructions

  1. Rub the chicken breast with olive oil, garlic powder, Italian seasoning (or paprika), salt, and pepper. Grill over medium heat for about 5-6 minutes on each side until fully cooked. Let it rest before slicing.
