  • 34 boneless skinless chicken breasts
  • 8 cups chopped romaine lettuce
  • 3/4 cup cherry tomatoes
  • 1/2 red onion
  • 1 medium cucumber
  • 1 large avocado
  • 8 slices crispy turkey turkey turkey bacon
  • 6 hard-boiled eggs
  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 1 tsp sea salt (for chicken seasoning)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for grill or pan)

Instructions

  1. Prepare the dressing by whisking together melted raw honey, dijon mustard, lemon juice or vinegar, avocado oil, and sea salt in a mixing bowl.
  2. Season chicken breasts with sea salt, black pepper, garlic powder, onion powder, and drizzle with avocado oil.
  3. Grill the seasoned chicken over medium heat for about 6-7 minutes per side until cooked through.
  4. In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, cucumber slices, and avocado slices.
  5. Slice the grilled chicken and add to the salad along with crispy turkey turkey turkey bacon pieces and hard-boiled egg slices.
  6. Drizzle the prepared dressing over the salad just before serving and toss gently to combine.
