  • ½ cup teriyaki sauce
  • 8 cups chopped romaine lettuce
  • 2 avocados
  • ½ cup cherry tomatoes
  • 1 can (15-ounce) pineapple rings
  • ⅓ cup rice vinegar or apple cider vinegar
  • ⅓ cup olive oil
  • Fresh cilantro
  • ½ cup pineapple juice (from the can of pineapple rings)

Instructions

  1. Marinate the chicken by combining it with teriyaki sauce and half of the pineapple juice in a resealable bag. Chill for 15 minutes.
  2. Prepare the dressing by whisking together teriyaki sauce, rice vinegar, olive oil, and remaining pineapple juice in a bowl. Chill until ready to use.
  3. Preheat the grill to medium heat. Grill marinated chicken and pineapple until cooked through and marked (about 6-10 minutes per side for chicken).
  4. Slice the grilled chicken and assemble the salad starting with lettuce at the base, then adding chicken, tomatoes, onions, avocado slices, grilled pineapple, and cilantro on top.
