  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup raspberry or strawberry jam
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Red food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix wet ingredients: eggs, vegetable oil, buttermilk, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. For the filling, heat jam until liquid and cool slightly.
  7. Once cupcakes are cool, core them and fill each with jam.
  8. For frosting, beat softened butter then gradually add powdered sugar; mix in cream, vanilla, and food coloring.
  9. Frost filled cupcakes generously.
