  • ½ cup very cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • 1 heaping cup powdered sugar (for glaze)
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup (for glaze)

Instructions

  1. Prepare the butter, cream, and eggs. Whisk the cream with one egg and one yolk; chill in the freezer.
  2. In a food processor, pulse flour, sugar, baking powder, chai spice blend, and salt. Add cold butter and pulse until mixed.
  3. Gradually add the chilled cream mixture until a dough forms.
  4. Shape the dough into a disc and freeze for 30 minutes.
  5. Roll out and cut into scone shapes.
  6. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Bake scones for 20–22 minutes until golden; cool before glazing.
  8. For the glaze, whisk powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt together until thick.
