  • 1 fresh pineapple, cut into rounds
  • 2 lbs boneless chicken thighs (or breasts)
  • 1/2 cup coconut aminos
  • 1/4 cup pineapple juice
  • 1/4 cup tomato paste
  • 46 pitted dates, soaked and drained
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika

Instructions

  1. Soak dates in warm water until soft.
  2. In a blender, combine all marinade ingredients and blend until smooth.
  3. Place chicken in a shallow dish, pour marinade over it, cover, and refrigerate for at least 30 minutes (up to 24 hours).
  4. Preheat grill to high heat (500°F). Grill marinated chicken and pineapple for about 5–6 minutes per side until cooked through.
  5. Serve grilled chicken and pineapple over rice or mixed greens.
