  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 2 cloves garlic (minced)
  • 2 cups cooked rice (white or brown)
  • 1 cup flour (for coating)
  • salt and pepper (to taste)
  • 1 tbsp grated ginger
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)

  • green onions (optional garnish)

Instructions

  1. Season chicken with salt and pepper; coat with flour.
  2. Heat oil in a skillet over medium-high heat and cook chicken until golden brown, about 3-4 minutes per side. Set aside.
  3. In the same skillet, sauté ginger and garlic until fragrant (about 30 seconds).
  4. Add pineapple juice, soy sauce, and brown sugar; bring to a simmer.
  5. Stir in pineapple chunks.
  6. Mix cornstarch with water and add to the skillet; cook until thickened (about 2 minutes).
  7. Return chicken to the skillet and coat with sauce for an additional 2 minutes.
  8. Serve over cooked rice.
